BANANA OATMEAL PANCAKES

Banana oatmeal pancakes made right in the blender, and on the table in minutes. These fluffy healthy pancakes are naturally gluten free and dairy free and are sweetened with Just Date Syrup. They make for a fast, simple, and delicious breakfast to fuel your everyday.

INGREDIENTS:

  • 1 cup of rolled oats

  • 1 cup of oat milk (or other milk of choice)

  • 2 medium ripe bananas

  • 2 eggs (optional for a protein boost)

  • 1 tsp cinnamon

  • 1 Tbsp Just Date Syrup, plus extra for drizzling

  • 1 Tbsp nut butter of choice

  • 1 Tbsp chia and/or hemp hearts

  • 1 tsp baking powder

INSTRUCTIONS:

  1. Blend all of the ingredients until they form a smooth batter

  2. Bring a skillet to medium heat, and add a pinch of grass fed butter or coconut oil

  3. Use a 1/4 cup measuring spoon to portion pancake batter onto the skillet, leaving space between them as they cook

  4. Flip them after 2-3 minutes to finish cooking them on the other side for a few minutes

  5. Repeat until you've used all of your batter, top your pancakes with a drizzle of date syrup or pomegranate syrup and any of your other favorite toppings!

TAHINI DATE SYRUP GRANOLA

INGREDIENTS:

  • 2 cups rolled oats

  • 1/4 cup chopped walnuts

  • 1/4 cup chopped almonds

  • 1/2 cup pumpkin seeds

  • 1/4 cup chopped pecans

  • 1/2 cup unsweetened coconut flakes

  • 1 tbsp cinnamon

  • 1/2 tbsp cardamom

  • 1 1/2 tsp kosher salt

  • 1/4 cup tahini

  • 1/4 cup olive oil

  • 1/2 cup Just Date Syrup

INSTRUCTIONS:

  1. Combine dry ingredients (rolled oats through salt). Whisk together tahini, olive oil, and Just Date Syrup, and mix well with dry ingredients.

  2. Lay on parchment paper in a single layer on a baking sheet. May have to do in batches. Bake at 350 for 15 minutes. Check on granola and toss once. Bake for another 5-7 minutes, but watch closely. Let it darken but not burn.

  3. Enjoy with a scoop of almond butter, drizzle of just date syrup, and seasonal fruit!

CHARRED BRUSSEL SPROUTS WITH DATES + WALNUTS

This is one of our favorite brussels recipes, because of both its deliciousness and its ease! This is cooking at its best - a dish that can come together in minutes but wow any guests with explosions of flavor and a perfect blend of ingredients.

INGREDIENTS:

  • 1 1/2 pounds of Brussels sprouts cut into half

  • 2 tsp of zataar

  • 1 tsp smoked paprika 

  • 1 tsp is red chili flakes

  • 1 tsp is Far East Blend (1/2 tsp ground cumin, 1/4 tsp ground coriander, 1/4 tsp ground turmeric, and a pinch of cinnamon)

  • 1 tbsp of Just Date Syrup

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 3/4 cup chopped dates

  • 3/4 cup toasted chopped walnuts 

  • 1/2 cup pom arils 

INSTRUCTIONS:

  1. Preheat oven to 400 degrees.

  2. In a small sheet pan, toss all ingredients together except dates, walnuts and pom arils.

  3. Lay the Brussels sprouts face down. 

  4. Put it in the oven for 30 min, shake them around half way through. They should be charred at 30 minutes.

  5. Put them in a large bowl, toss the dates, walnuts and pom arils into the mixture!
