CHIPOTLE CASHEW CHEESE DIP

 
 

INGREDIENTS:

  • 1 cup raw cashews

  • ½  cup water, warm

  • 1 tablespoon nutritional yeast

  • 1 tablespoon fresh lemon juice

  • 1 clove fresh garlic, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon chipotle powder

  • 1 teaspoon cumin, ground

  • ½  teaspoon miso paste

  • ½ red pepper, roughly chopped (or one small lunch box red pepper)

  • salt & pepper to taste

INSTRUCTIONS:

Add all ingredients to the blender and mix -- start on low setting to incorporate ingredients. Switch to a high setting to achieve creamier consistency. Taste and adjust seasons as you’d like.
